  • 1/2 tsp salt (for rice)
  • 1 tbsp unsalted butter or a drizzle of oil (optional, for rice)
  • 2.5 cups (about 300g) all-purpose flour
  • 1 tsp instant dry yeast
  • 1 tsp sugar (for naan)
  • 1/2 tsp salt (for naan)
  • 1/2 cup (120ml) warm milk
  • 1/4 cup (60ml) warm water
  • 2 tbsp plain yogurt (for naan)
  • 1 tbsp vegetable oil or ghee (for naan dough), plus extra for greasing
  • 3 tbsp unsalted butter, melted (for garlic butter)
  • 2-3 cloves garlic, minced (for garlic butter)
  • 2 tbsp fresh cilantro, finely chopped (for garlic butter)
  • Fresh cilantro, chopped (for garnish)
  • A swirl of heavy cream or yogurt (for garnish)

Instructions

  1. Step 1
    Cut 600g chicken into 1-inch cubes. In a bowl, combine 1 cup yogurt, 2 tbsp lemon juice, 1 tbsp ginger-garlic paste, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp turmeric powder, 1 tsp Kashmiri red chili powder, 1/2 tsp garam masala, 1/2 tsp salt, and 1/4 tsp black pepper. Pour marinade over chicken; toss to coat. Cover and refrigerate for 30 minutes (up to 12-18 hours for best results).
  2. Step 2
    In a large bowl, combine 1/2 cup warm milk, 1/4 cup warm water, 1 tsp sugar, and 1 tsp instant dry yeast; let sit 5-10 minutes until frothy. Add 2 tbsp plain yogurt, 1 tbsp vegetable oil/ghee, and 1/2 tsp salt. Gradually add 2.5 cups all-purpose flour, mixing until a shaggy dough forms. Knead on a lightly floured surface for 8-10 minutes until smooth and elastic. Lightly grease a bowl, place dough in it, turn to coat, cover, and let rise in a warm, draft-free spot for 1.5-2 hours until doubled. Prepare garlic butter: Melt 3 tbsp butter, stir in 2-3 minced garlic cloves and 2 tbsp chopped fresh cilantro. Set aside.
  3. Step 3
    Heat 2 tbsp oil/ghee in a pot over medium heat. Sauté 1 large chopped onion for 8-10 minutes until translucent and golden. Stir in 1 tbsp ginger-garlic paste; cook 1-2 minutes until fragrant. Reduce heat to low-medium. Add 1 tsp ground cumin, 1 tsp ground coriander, 1/2 tsp turmeric powder, 1/2 tsp Kashmiri red chili powder; cook 30-60 seconds, stirring. Pour in 1 can crushed tomatoes/purée; simmer partially covered for 10-15 minutes, stirring. (Optional: Blend sauce until smooth.) Return to low heat. Stir in 1/2 cup broth, then whisk in 1/2 cup heavy cream. Add 2 tbsp butter (optional), 1 tsp garam masala, 1/4 tsp crushed fenugreek leaves, and 1 tsp sugar. Season with salt and pepper. Simmer 5-10 minutes.
  4. Step 4
    Heat 1 tbsp vegetable oil/ghee in a large skillet over medium-high heat. Add marinated chicken in a single layer (cook in batches if needed). Cook 3-4 minutes per side until deeply golden, slightly charred, and cooked through (165°F/74°C). Remove cooked chicken and set aside, loosely covered.
  5. Step 5
    Rinse 1.5 cups Basmati rice under cold water until clear (optional: soak 20-30 minutes, then drain). In a saucepan with a tight-fitting lid, combine rice, 2.5 cups water, and 1/2 tsp salt (and 1 tbsp butter/oil if desired). Bring to a rolling boil. Reduce heat to lowest, cover tightly, and simmer for 12 minutes. Turn off heat, keep lid on, and rest for 10 minutes. Fluff gently with a fork.
  6. Step 6
    Gently punch down risen dough. Divide into 6-8 portions and roll into balls; cover. Lightly flour surface. Roll each ball into an oval/teardrop, 1/8 to 1/4 inch thick. Stovetop Method: Heat a cast-iron skillet over medium-high heat (no oil). Place one naan on hot pan. Cook 1-2 minutes until bubbles form; flip and cook 1-2 minutes more until puffed and charred. Immediately brush with garlic butter. Stack and cover to keep warm. (Alternative Oven Method: Broil naan on a preheated hot baking sheet for 1-2 minutes until puffed and charred, then brush with garlic butter.)
  7. Step 7
    Add cooked chicken tikka pieces to the simmering masala sauce. Stir and simmer on low for 5-10 minutes. Taste and adjust seasoning. Remove from heat. Garnish with chopped cilantro and an optional swirl of cream/yogurt. Serve Chicken Tikka Masala hot with fluffy Basmati rice and warm garlic naan, garnished with lemon wedges.
