Instructions

    If skin-on, remove skin. Rinse and thoroughly pat dry salmon fillets. Cut salmon into 1-inch cubes. Place in a bowl, drizzle with 1 tbsp olive oil, and season with salt and pepper. Toss to coat.

    In a separate bowl, whisk together honey, minced garlic, low-sodium soy sauce, rice vinegar, grated ginger (if using), sriracha/red pepper flakes, and sesame oil until well combined.

    Pour the marinade over the salmon cubes, ensuring all pieces are well coated. Cover and refrigerate for 20-30 minutes (do not exceed 1 hour).

    Heat 1-2 tbsp high-smoke-point oil in a large skillet over medium-high heat. Add salmon in a single layer, cooking in batches if necessary, for 2-3 minutes per side until golden-brown and cooked through (145°F/63°C). During the last minute, pour any remaining marinade over the salmon to glaze, watching closely to prevent burning.
  5. Step 5
    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange marinated salmon bites in a single layer. Bake for 10-15 minutes, until opaque and easily flaked. For extra caramelization, broil for 1-2 minutes, watching carefully.
  6. Step 6
    Transfer cooked salmon to a serving platter. Garnish generously with toasted sesame seeds and sliced chives or green onions. Serve immediately with rice, vegetables, or as an appetizer.
