Instructions

  1. In a large mixing bowl, combine the dry ingredients: 2 cups of all-purpose flour, 1/4 cup of granulated sugar, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/2 teaspoon of ground cinnamon. Whisk together until well blended.
  2. In a separate bowl, crack 2 large eggs and beat them lightly. Add 1/2 cup of whole milk and 1 teaspoon of pure vanilla extract to the eggs. Whisk until the mixture is smooth and well combined.
  3. Pour the wet ingredients into the bowl with the dry ingredients. Add 1/4 cup of melted unsalted butter to the mixture. Stir gently with a spatula or wooden spoon until the dough starts to come together. Be careful not to overmix; it’s okay if there are a few lumps.
  4. Once the dough is combined, cover the bowl with plastic wrap or a clean kitchen towel. Let it rest for about 30 minutes at room temperature.
  5. After the dough has rested, prepare your frying station. In a deep, heavy-bottomed pot or a deep fryer, pour enough vegetable oil to fill it about 2-3 inches deep.
  6. Heat the oil over medium heat until it reaches 350°F (175°C). Test the oil temperature by dropping a small piece of dough into the oil; if it sizzles and rises to the surface, the oil is ready.
  7. Prepare a plate lined with paper towels to drain the fried beignets.
  8. Once the oil is hot, use a spoon or a small ice cream scoop to drop spoonfuls of the dough into the hot oil. Fry in batches of 3-4 beignets at a time.
  9. Fry the beignets for about 2-3 minutes on one side, or until they turn a golden brown color. Flip them over and fry for an additional 2-3 minutes on the other side.
  10. Remove the beignets from the oil using a slotted spoon and allow any excess oil to drip off before transferring them to the prepared plate.
  11. Continue frying the remaining dough in batches until all the beignets are cooked.
  12. Once all the beignets are fried and drained, dust them with powdered sugar. Serve warm with optional dipping sauces.
