These Turkey Cranberry Sandwiches offer a delicious way to use leftover turkey, combining tender meat with creamy filling and tangy cranberry sauce between your choice of bread. - 2 cups cooked turkey, shredded or sliced
- 1 cup cranberry sauce (homemade or store-bought)
- 1/2 cup cream cheese, softened
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh parsley, chopped (optional)
- Salt and pepper to taste
- 8 slices of whole grain or sourdough bread
- 1 cup arugula or spinach (optional)
- Butter for toasting (optional)
Instructions
- In a large mixing bowl, combine the shredded or sliced turkey with the cranberry sauce. Stir gently until the turkey is well coated with the sauce.
- In a separate bowl, mix the softened cream cheese, mayonnaise, and Dijon mustard until smooth and creamy.
- Fold the cream cheese mixture into the turkey and cranberry mixture gently to keep the turkey pieces intact.
- Add salt and pepper to taste, and mix in chopped fresh parsley if desired.
- For toasted sandwiches, heat a skillet over medium heat and spread a thin layer of butter on one side of each slice of bread.
- Place the bread slices in the skillet, buttered side down, and toast until golden brown, about 2-3 minutes. Flip and toast the other side for another 2-3 minutes. Remove and set aside.
- For cold sandwiches, lay out the slices of bread on a clean surface.
- Spread a generous amount of the turkey cranberry filling on one slice of bread.
- If using, add a handful of arugula or spinach on top of the filling.
- Top with another slice of bread, placing the toasted side facing the filling if applicable.
- Repeat until all sandwiches are assembled.
- Cut each sandwich in half diagonally or into quarters for easier handling.
- Arrange on a platter and garnish with parsley or a small bowl of extra cranberry sauce for dipping.
- Serve immediately or refrigerate until ready to serve.
