  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon chili garlic sauce (adjust to taste)
  • 1 teaspoon white vinegar
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh chives (for garnish)
  • 1 teaspoon smoked paprika (for garnish)
  • Optional: Sriracha sauce for extra heat

Instructions

  1. Start by placing the eggs in a single layer in a saucepan. Add enough cold water to cover the eggs by about an inch.
  2. Place the saucepan on the stove over medium-high heat and bring the water to a rolling boil.
  3. Once boiling, cover the saucepan with a lid and remove it from the heat. Let the eggs sit in the hot water for 12-14 minutes, depending on your preferred yolk doneness.
  4. While the eggs are cooking, prepare an ice bath by filling a large bowl with ice and cold water.
  5. After the cooking time, carefully transfer the eggs to the ice bath using a slotted spoon. Let them cool for at least 5 minutes.
  6. Once cool, gently tap each egg on a hard surface to crack the shell.
  7. Peel the eggs under running water to help remove the shell easily, being careful not to remove any egg white.
  8. Rinse the peeled eggs to remove any shell fragments and pat them dry with a paper towel.
  9. Slice each egg in half lengthwise and carefully remove the yolks, placing them in a mixing bowl. Set the egg whites aside on a serving platter.
  10. Add mayonnaise, Dijon mustard, chili garlic sauce, white vinegar, salt, and pepper to the yolks.
  11. Mash the yolks with a fork and mix until smooth and creamy. Adjust seasoning as needed.
  12. Fill each egg white half with the yolk mixture using a spoon or piping bag.
  13. Sprinkle smoked paprika on top for color and flavor.
  14. Garnish with chopped chives and drizzle with Sriracha sauce if desired.
  15. Arrange deviled eggs on a platter and serve immediately, or refrigerate for up to 2 hours before serving. They can be served cold or at room temperature.
  16. Store leftovers in an airtight container in the refrigerator for up to 2 days.
  17. To prevent drying, cover the container with plastic wrap or place a damp paper towel over the eggs before sealing.
  18. Add crumbled bacon, diced jalapeños, or chopped olives to the yolk mixture for different flavors.
