- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard

- 1 tablespoon chopped fresh chives (for garnish)
- 1 teaspoon smoked paprika (for garnish)

Instructions
- Start by placing the eggs in a single layer in a saucepan. Add enough cold water to cover the eggs by about an inch.
- Place the saucepan on the stove over medium-high heat and bring the water to a rolling boil.
- Once boiling, cover the saucepan with a lid and remove it from the heat. Let the eggs sit in the hot water for 12-14 minutes, depending on your preferred yolk doneness.
- While the eggs are cooking, prepare an ice bath by filling a large bowl with ice and cold water.
- After the cooking time, carefully transfer the eggs to the ice bath using a slotted spoon. Let them cool for at least 5 minutes.
- Once cool, gently tap each egg on a hard surface to crack the shell.
- Peel the eggs under running water to help remove the shell easily, being careful not to remove any egg white.
- Rinse the peeled eggs to remove any shell fragments and pat them dry with a paper towel.
- Slice each egg in half lengthwise and carefully remove the yolks, placing them in a mixing bowl. Set the egg whites aside on a serving platter.
- Add mayonnaise, Dijon mustard, chili garlic sauce, white vinegar, salt, and pepper to the yolks.
- Mash the yolks with a fork and mix until smooth and creamy. Adjust seasoning as needed.
- Fill each egg white half with the yolk mixture using a spoon or piping bag.
- Sprinkle smoked paprika on top for color and flavor.
- Garnish with chopped chives and drizzle with Sriracha sauce if desired.
- Arrange deviled eggs on a platter and serve immediately, or refrigerate for up to 2 hours before serving. They can be served cold or at room temperature.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
- To prevent drying, cover the container with plastic wrap or place a damp paper towel over the eggs before sealing.
- Add crumbled bacon, diced jalapeños, or chopped olives to the yolk mixture for different flavors.
