- 1/4 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk
- 1 pound breakfast sausage (preferably spicy)
- 1/4 cup all-purpose flour (for gravy thickening)
- 2 cups whole milk

Instructions
- Preheat your oven to 450°F (230°C).
- In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of baking soda, and 1 teaspoon of salt. Whisk until well combined.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
- Make a well in the center of the flour mixture and pour in 3/4 cup of buttermilk. Stir gently with a fork until the dough just comes together.
- Turn the dough out onto a lightly floured surface. Gently knead the dough about 5-6 times until it holds together.
- Pat the dough into a rectangle about 1-inch thick. Using a floured biscuit cutter or a glass, cut out biscuits and place them on a baking sheet lined with parchment paper.
- Gather any scraps of dough, pat them together, and cut out more biscuits until all the dough is used.
- Bake the biscuits in the preheated oven for 12-15 minutes, or until golden brown on top.
- In a large skillet over medium heat, add 1 pound of breakfast sausage. Cook until browned and cooked through, about 5-7 minutes.
- Sprinkle 1/4 cup of all-purpose flour over the sausage. Stir well to combine and cook for about 1-2 minutes.
- Gradually pour in 2 cups of whole milk while continuously stirring. Keep stirring until the mixture thickens, about 5-7 minutes.
- Season the gravy with salt and pepper to taste. Adjust according to your preference.
- Once thick and creamy, reduce the heat to low and keep warm while the biscuits finish baking.
- Once the biscuits are golden brown, remove them from the oven and let cool for a minute.
- Split a biscuit in half and place it on a plate. Generously ladle the sausage gravy over the top.
- Garnish with a sprinkle of fresh parsley or additional black pepper if desired.

- For extra flavor, consider adding herbs or spices to the sausage while cooking.
- If you prefer a milder gravy, use a mild sausage instead of spicy.
