  • 2 tablespoons olive oil
  • 1 pound salmon fillet, skinless
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Fill a large pot with water and bring it to a rolling boil over high heat. Add a generous pinch of salt.
  2. Add the fettuccine pasta to the boiling water. Cook according to package instructions (8-10 minutes) until al dente, stirring occasionally.
  3. Reserve about 1 cup of pasta water, then drain the pasta in a colander and set aside.
  4. Pat the salmon fillet dry and season both sides with salt and pepper.
  5. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
  6. Place the salmon in the skillet and cook for 4-5 minutes on one side. Flip and cook for another 3-4 minutes until it flakes easily. Remove from skillet and set aside.
  7. Once cool, flake the salmon into bite-sized pieces.
  8. In the same skillet, reduce heat to medium and sauté minced garlic for about 30 seconds until fragrant.
  9. Pour in 1 cup of heavy cream, stirring to combine. Simmer gently for 2-3 minutes.
  10. Gradually add 1 cup of grated Parmesan cheese, stirring until melted and smooth. Adjust thickness with reserved pasta water if needed.
  11. Stir in 1 teaspoon of Italian seasoning and adjust seasoning with salt and pepper. Simmer for another minute.
  12. Toss the drained fettuccine in the Alfredo sauce until well coated, adding reserved pasta water for desired creaminess.
  13. Gently fold in the flaked salmon, heating through for 1-2 minutes.
  14. Transfer the creamy salmon Alfredo pasta to serving plates or a large bowl.
  15. Sprinkle with freshly chopped parsley and additional Parmesan cheese if desired.
  16. Serve immediately while hot.
