- 8 ounces fettuccine pasta
- 2 tablespoons olive oil
- 1 pound salmon fillet, skinless
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Fill a large pot with water and bring it to a rolling boil over high heat. Add a generous pinch of salt.
- Add the fettuccine pasta to the boiling water. Cook according to package instructions (8-10 minutes) until al dente, stirring occasionally.
- Reserve about 1 cup of pasta water, then drain the pasta in a colander and set aside.
- Pat the salmon fillet dry and season both sides with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
- Place the salmon in the skillet and cook for 4-5 minutes on one side. Flip and cook for another 3-4 minutes until it flakes easily. Remove from skillet and set aside.
- Once cool, flake the salmon into bite-sized pieces.
- In the same skillet, reduce heat to medium and sauté minced garlic for about 30 seconds until fragrant.
- Pour in 1 cup of heavy cream, stirring to combine. Simmer gently for 2-3 minutes.
- Gradually add 1 cup of grated Parmesan cheese, stirring until melted and smooth. Adjust thickness with reserved pasta water if needed.
- Stir in 1 teaspoon of Italian seasoning and adjust seasoning with salt and pepper. Simmer for another minute.
- Toss the drained fettuccine in the Alfredo sauce until well coated, adding reserved pasta water for desired creaminess.
- Gently fold in the flaked salmon, heating through for 1-2 minutes.
- Transfer the creamy salmon Alfredo pasta to serving plates or a large bowl.
- Sprinkle with freshly chopped parsley and additional Parmesan cheese if desired.
- Serve immediately while hot.
