  • 1 egg, beaten (for egg wash)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions

  1. In a medium mixing bowl, add the softened cream cheese. Ensure it’s at room temperature for easy mixing.
  2. Using a hand mixer or a whisk, beat the cream cheese until smooth and creamy (about 1-2 minutes).
  3. Add the powdered sugar and vanilla extract, mixing until well combined and fluffy (another 1-2 minutes).
  4. Gently fold in the fresh raspberries, being careful not to mash them too much.
  5. Preheat your oven to 375°F (190°C).
  6. Unroll the refrigerated pie crusts on a clean, flat surface.
  7. Using a round cookie cutter or a glass, cut out circles from the pie crust, aiming for about 3 inches in diameter (12-15 circles per crust).
  8. Place the circles on a baking sheet lined with parchment paper, leaving space between each.
  9. Take a small spoonful of the cream cheese filling and place it in the center of each pie crust circle (about a tablespoon).
