- 1 egg, beaten (for egg wash)
- 1 tablespoon granulated sugar (for sprinkling)
Instructions
- In a medium mixing bowl, add the softened cream cheese. Ensure its at room temperature for easy mixing.
- Using a hand mixer or a whisk, beat the cream cheese until smooth and creamy (about 1-2 minutes).
- Add the powdered sugar and vanilla extract, mixing until well combined and fluffy (another 1-2 minutes).
- Gently fold in the fresh raspberries, being careful not to mash them too much.
- Preheat your oven to 375°F (190°C).
- Unroll the refrigerated pie crusts on a clean, flat surface.
- Using a round cookie cutter or a glass, cut out circles from the pie crust, aiming for about 3 inches in diameter (12-15 circles per crust).
- Place the circles on a baking sheet lined with parchment paper, leaving space between each.
- Take a small spoonful of the cream cheese filling and place it in the center of each pie crust circle (about a tablespoon).
- Gently fold the edges of the pie crust over the filling to create a pocket, pinching or crimping the edges for decoration.
- Brush the tops with the beaten egg for a golden finish.
- Sprinkle a little granulated sugar on top for added sweetness and crunch.
- Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until golden brown and flaky.
- Monitor them during the last few minutes to prevent over-browning.
- Once done, let the bites cool on the baking sheet for about 5 minutes.
- Transfer to a wire rack to cool completely.
- Arrange the bites on a serving platter and garnish with additional fresh raspberries.
- For an extra touch, consider drizzling some melted chocolate over the bites before serving.
