Description
A tropical twist on the classic mojito, blending pineapple, kiwi, mint, lime, and rum into a vibrant cocktail.
Ingredients

- 1 ripe pineapple, peeled, cored, and cubed
- 3 ripe kiwis, peeled and sliced
- 1 bunch of fresh mint leaves (about 2 cups loosely packed)
- 6 tablespoons granulated sugar (or more, to taste)
- 1 cup fresh lime juice (from about 8–10 limes)
- 1 cup white rum (or more, to taste)
- 4 cups club soda, chilled
- Ice cubes
- Lime wedges and kiwi slices, for garnish (optional)
Instructions
- Combine the cubed pineapple and sliced kiwi in a blender.
- Blend until completely smooth. If the mixture is too thick, add a tablespoon or two of water.
- Taste and adjust sweetness by adding sugar, a tablespoon at a time, until desired sweetness is reached.
- Set the puree aside.
- Divide the mint leaves evenly among 6-8 glasses.
- Sprinkle about 1 tablespoon of sugar over the mint leaves in each glass.
- Using a muddler, gently press and twist the mint leaves and sugar together to bruise the leaves slightly.
- Pour about 2 tablespoons of fresh lime juice into each glass over the muddled mint and sugar.
- Pour about 2 ounces of white rum into each glass.
- Spoon about 2-3 tablespoons of the pineapple kiwi puree into each glass.
- Stir the ingredients in each glass thoroughly.
- Fill each glass with ice cubes.
- Top each glass with chilled club soda.
- Garnish with a lime wedge and a slice of kiwi, if desired.
- Taste and adjust sweetness with sugar or simple syrup.
- Adjust tartness with lime juice.
- Adjust strength with rum.
- Adjust mint flavor by muddling more mint leaves.
- Adjust fruit flavor by adding more puree.
Notes
- Use fresh, high-quality ingredients for the best flavor.
- Don’t over-muddle the mint, as it can become bitter.
- Chill glasses for an extra refreshing mojito.
- To make a pitcher, scale up the recipe accordingly.
- Experiment with other fruits and flavors.
- For a non-alcoholic version, omit the rum and replace it with more club soda or sparkling water. Add a splash of pineapple juice or kiwi juice for extra flavor.
