Ingredients

Scale
  • 1 cup pecans, chopped
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup corn syrup
  • 1/2 teaspoon ground cinnamon (optional)
  • Whipped cream or vanilla ice cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the granulated sugar, brown sugar, and flour. Whisk until well blended.
  3. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Add the baking powder, salt, and ground cinnamon (if using) to the mixture. Stir until well incorporated.
  6. Fold in the chopped pecans.
  7. In a medium bowl, combine the corn syrup, remaining brown sugar, and a pinch of salt. Mix until the sugar is dissolved.
  8. Pour the corn syrup mixture into the batter and gently fold it in.
  9. Grease a 9×13 inch baking dish with butter or non-stick spray.
  10. Pour the batter mixture into the prepared baking dish, spreading it evenly.
  11. Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  12. Remove from the oven and let cool for 10-15 minutes.
  13. Cut into squares and serve warm, optionally topped with whipped cream or vanilla ice cream and additional chopped pecans for garnish.

Notes

  • Ensure the melted butter is not too hot when mixing with the eggs to avoid cooking them.
  • For a richer flavor, consider toasting the pecans before adding them to the batter.
  • This cobbler is best served warm, but can be enjoyed at room temperature as well.
