- 1 pound ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet (1 oz) taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 bag (32 oz) frozen tater tots
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro (optional, for garnish)
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).
- Drain any excess fat from the skillet carefully.
- Add the diced onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the black beans, corn, diced tomatoes with green chilies, and taco seasoning. Stir until well combined and let it simmer for about 5 minutes.
- Season with salt and pepper to taste.
- Preheat your oven to 375°F (190°C).
- Spread the meat and bean mixture evenly in a large baking dish (about 9×13 inches).
- Dollop the sour cream over the meat mixture and spread it out slightly.
- Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the sour cream layer.
- Arrange the frozen tater tots in a single layer on top of the cheese.
- Place the casserole in the preheated oven and bake for about 30-35 minutes, or until the tater tots are golden brown and crispy.
- Remove from the oven and let it cool for about 5-10 minutes before serving.
- Garnish with chopped fresh cilantro if desired.
