  • 1 pound ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet (1 oz) taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 bag (32 oz) frozen tater tots
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).
  2. Drain any excess fat from the skillet carefully.
  3. Add the diced onion and sauté for about 3-4 minutes until translucent.
  4. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Add the black beans, corn, diced tomatoes with green chilies, and taco seasoning. Stir until well combined and let it simmer for about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Preheat your oven to 375°F (190°C).
  8. Spread the meat and bean mixture evenly in a large baking dish (about 9×13 inches).
  9. Dollop the sour cream over the meat mixture and spread it out slightly.
  10. Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the sour cream layer.
  11. Arrange the frozen tater tots in a single layer on top of the cheese.
  12. Place the casserole in the preheated oven and bake for about 30-35 minutes, or until the tater tots are golden brown and crispy.
  13. Remove from the oven and let it cool for about 5-10 minutes before serving.
  14. Garnish with chopped fresh cilantro if desired.
