Ingredients
Scale
- 2 large apples (Granny Smith or Honeycrisp)
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 package of refrigerated pie crusts (2 crusts)
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
- Oil for frying (vegetable or canola oil)
Instructions
- Peel, core, and dice the apples into small pieces (about 1/4 inch).
- In a medium bowl, combine diced apples, granulated sugar, ground cinnamon, lemon juice, cornstarch, and vanilla extract. Mix well and let sit for 10-15 minutes.
- Allow refrigerated pie crusts to sit at room temperature for about 10 minutes.
- Roll out one pie crust on a floured surface to about 1/8 inch thick. If using store-bought, skip this step.
- Cut the rolled-out crust into rectangles (about 3 inches by 4 inches).
- Repeat with the second pie crust.
- Place 1-2 tablespoons of apple filling in the center of a pie crust rectangle.
- Moisten the edges with water to help seal.
- Place another rectangle on top, press edges to seal, and crimp with a fork.
- Repeat until all filling is used, re-rolling scraps if necessary.
- Whisk together egg and milk for the egg wash.
- Make small slits on top of each pie for steam to escape.
- Brush the tops with egg wash.
- Heat about 2 inches of oil in a large skillet over medium heat.
- Fry a few pies at a time for 3-4 minutes on each side until golden brown.
- Remove with a slotted spoon and drain on paper towels.
- Repeat with remaining pies, adjusting heat as necessary.
- Let pies cool for a few minutes before serving.
- Serve warm, optionally dusted with powdered sugar or with a scoop of vanilla ice cream.
Notes
- Ensure the oil is hot enough before frying to achieve a crispy texture.
- Feel free to experiment with different apple varieties for varied flavors.
- These pies can be stored in an airtight container for a couple of days, but are best enjoyed fresh.
