  • 2 cups water (for cooking sago)
  • 1 can (400ml) coconut milk
  • 1 cup fresh mango puree (about 2 ripe mangoes)
  • 1/2 cup sugar (adjust to taste)
  • 1/2 teaspoon salt
  • 1 cup diced fresh mango (for topping)
  • Mint leaves (for garnish, optional)

Instructions

  1. Rinse the small tapioca pearls under cold water to remove excess starch.
  2. In a medium saucepan, bring 2 cups of water to a boil over medium heat. Add the rinsed sago pearls.
  3. Stir gently to prevent sticking, then reduce heat to low and simmer for 15-20 minutes until the pearls turn translucent.
  4. Remove from heat, cover, and let sit for an additional 10 minutes.
  5. Drain the sago in a fine-mesh sieve and rinse under cold water. Set aside.
  6. In a separate saucepan, combine coconut milk, sugar, and salt. Stir well.
  7. Heat over medium heat until warm, ensuring it does not boil. Stir occasionally to dissolve the sugar.
  8. Once dissolved, remove from heat and let cool slightly.
  9. Peel and chop the ripe mangoes into small pieces.
  10. Blend the chopped mangoes in a blender or food processor until smooth. Adjust sweetness if necessary.
  11. In a large mixing bowl, combine the cooked sago pearls with the coconut milk mixture. Stir gently.
  12. Add the mango puree and mix well until fully incorporated.
  13. Cover and refrigerate for at least 1 hour to meld flavors and chill.
  14. After chilling, stir the dessert gently.
  15. Spoon the mango sago mixture into serving bowls or glasses.
  16. Top with diced fresh mango and garnish with mint leaves if desired.
