  • 2 pounds of country-style pork ribs
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 teaspoon black pepper
  • 1 teaspoon sesame seeds (for garnish)
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a medium-sized bowl, combine the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, gochujang, and black pepper. Whisk until the brown sugar is fully dissolved and the mixture is well combined.
  2. Taste the marinade and adjust the seasoning if desired, adding more brown sugar for sweetness or gochujang for spiciness.
  3. Place the country-style pork ribs in a large resealable plastic bag or a shallow dish.
  4. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag tightly and massage the marinade into the meat, or cover the dish with plastic wrap.
  5. Refrigerate the ribs for at least 2 hours, preferably overnight for the best flavor.
  6. Preheat your oven to 300°F (150°C).
  7. Line a baking sheet with aluminum foil and place a wire rack on top.
  8. Remove the ribs from the marinade, letting any excess drip off, and reserve the marinade for later use.
  9. Place the marinated ribs on the wire rack, bone side down, ensuring they are not overcrowded.
  10. Cover the ribs loosely with aluminum foil.
  11. Bake in the preheated oven for about 2.5 to 3 hours.
  12. After 2.5 hours, remove the foil and brush the ribs with some of the reserved marinade.
  13. Increase the oven temperature to 400°F (200°C) and cook uncovered for an additional 20-30 minutes, basting with the marinade every 10 minutes.
  14. Once the ribs are caramelized and tender, remove them from the oven and let them rest for about 10 minutes.
  15. While resting, chop the green onions and toast the sesame seeds in a dry skillet over medium heat until golden brown.

Notes

  • For a spicier kick, increase the amount of gochujang in the marinade.
