  • 6 ripe kiwis, peeled and roughly chopped
  • 6 cups cold water, divided
  • 1/4 cup granulated sugar (or to taste)
  • 2 tablespoons lime juice, freshly squeezed
  • Ice cubes, for serving
  • Lime wedges, for garnish (optional)
  • Mint sprigs, for garnish (optional)

Instructions

  1. Prepare the Kiwi Puree: Peel and roughly chop the kiwis.
  2. Transfer the chopped kiwis to your blender or food processor. Add 2 cups of the cold water.
  3. Blend the kiwi mixture on high speed until it’s completely smooth. You might need to stop the blender a couple of times to scrape down the sides with a spatula to ensure everything is evenly pureed.
  4. Strain the kiwi mixture through a fine-mesh sieve into a large pitcher. Use a spatula or the back of a spoon to press the kiwi puree against the sieve, extracting as much juice as possible. Discard the solids left in the sieve.
  5. Sweeten and Flavor: Add the granulated sugar to the pitcher with the strained kiwi puree. Stir well until the sugar is completely dissolved.
  6. Add the freshly squeezed lime juice.
  7. Add the remaining 4 cups of cold water to the pitcher.
  8. Stir everything together thoroughly to ensure all the ingredients are well combined.
  9. Chill and Serve: Cover the pitcher and refrigerate the agua fresca for at least 30 minutes, or even better, for an hour or two.
  10. Before serving, give the agua fresca another good stir.
  11. Fill glasses with ice cubes.
  12. Pour the chilled kiwi agua fresca over the ice.
  13. Garnish with lime wedges and mint sprigs, if desired. Serve immediately.

  • Adjust Sweetness: Taste and add more sugar, honey, or agave nectar as needed.
  • Other Fruits: Experiment with adding strawberries, pineapple, or cucumber.
