- 2 slices of sourdough bread
- 1 medium apple (such as Honeycrisp or Granny Smith), thinly sliced
- 4 ounces sharp cheddar cheese, sliced
- 2 tablespoons hot honey (or regular honey mixed with a pinch of red pepper flakes)
- 1 tablespoon unsalted butter, softened
- 1 teaspoon Dijon mustard (optional)
- Fresh arugula or spinach (optional, for added greens)
Instructions
- Choose a good apple, wash it thoroughly, and slice it thinly (about 1/8-inch thick).
- If using a block, slice the sharp cheddar cheese into about 1/4-inch thick pieces.
- Lay out the sourdough bread on a cutting board. Optionally, spread a thin layer of Dijon mustard on one side of each slice.
- Spread softened butter on the outer sides of each slice of bread.
- On the unbuttered side of one slice, layer cheddar cheese, apple slices, arugula or spinach (if using), and drizzle with hot honey.
- Place the second slice of bread on top, buttered side facing out, and press down gently.
- Heat a skillet or griddle over medium heat.
- Place the sandwich in the skillet and cook for about 3-4 minutes until golden brown and crispy.
- Flip the sandwich using a spatula and cover with a lid for the last few minutes to help the cheese melt. Cook for another 3-4 minutes.
- Ensure the cheese is melted and gooey, cooking for an additional minute or two if necessary.
- Carefully remove the sandwich from the skillet and let it sit for a minute before slicing in half.
- Drizzle additional hot honey over the top after slicing for extra sweetness and heat.
- Serve on a plate, optionally with chips or a simple salad.
