  • 2 slices of sourdough bread
  • 1 medium apple (such as Honeycrisp or Granny Smith), thinly sliced
  • 4 ounces sharp cheddar cheese, sliced
  • 2 tablespoons hot honey (or regular honey mixed with a pinch of red pepper flakes)
  • 1 tablespoon unsalted butter, softened
  • 1 teaspoon Dijon mustard (optional)
  • Fresh arugula or spinach (optional, for added greens)

Instructions

  1. Choose a good apple, wash it thoroughly, and slice it thinly (about 1/8-inch thick).
  2. If using a block, slice the sharp cheddar cheese into about 1/4-inch thick pieces.
  3. Lay out the sourdough bread on a cutting board. Optionally, spread a thin layer of Dijon mustard on one side of each slice.
  4. Spread softened butter on the outer sides of each slice of bread.
  5. On the unbuttered side of one slice, layer cheddar cheese, apple slices, arugula or spinach (if using), and drizzle with hot honey.
  6. Place the second slice of bread on top, buttered side facing out, and press down gently.
  7. Heat a skillet or griddle over medium heat.
  8. Place the sandwich in the skillet and cook for about 3-4 minutes until golden brown and crispy.
  9. Flip the sandwich using a spatula and cover with a lid for the last few minutes to help the cheese melt. Cook for another 3-4 minutes.
  10. Ensure the cheese is melted and gooey, cooking for an additional minute or two if necessary.
  11. Carefully remove the sandwich from the skillet and let it sit for a minute before slicing in half.
  12. Drizzle additional hot honey over the top after slicing for extra sweetness and heat.
  13. Serve on a plate, optionally with chips or a simple salad.
