Instructions
- Start by cleaning the chicken thighs under cold running water. Pat them dry with paper towels to remove excess moisture.
- Cut the chicken thighs into bite-sized pieces, approximately 1 to 1.5 inches in size.
- In a large mixing bowl, combine the chicken pieces with salt and pepper to taste.
- In a separate bowl, prepare the marinade by mixing together the soy sauce, oyster sauce, rice vinegar, honey, sesame oil, minced garlic, grated ginger, and red pepper flakes (if using). Stir well until the honey is fully dissolved.
- Add the marinade to the bowl with the chicken. Toss the chicken pieces until they are well coated in the marinade. Cover the bowl with plastic wrap or transfer the chicken to a resealable plastic bag, ensuring all pieces are submerged in the marinade.
- Let the chicken marinate in the refrigerator for at least 30 minutes, but for best results, allow it to marinate for 2 to 4 hours.

- If the sauce in the skillet is too thin, increase the heat to high and let it simmer for a few minutes until it thickens slightly.
- Once the chicken is fully cooked, remove the skillet from heat. Taste the sauce and adjust seasoning if necessary.
- Transfer the garlic ginger chicken to a serving platter. Use a slotted spoon to ensure excess sauce remains in the skillet, or pour the sauce over the chicken.
- Garnish the chicken with chopped green onions and fresh cilantro.
- Serve the garlic ginger chicken hot, accompanied by steamed rice or noodles.
