- 2 large onions, thinly sliced
- 3 tablespoons olive oil
- 1 tablespoon butter

- 1 cup beef broth
- 1 cup shredded Gruyère cheese
- 1/2 cup heavy cream

Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry with paper towels and season both sides with salt, black pepper, and garlic powder.
- In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the chicken breasts for 5-6 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and the butter. Once melted, add the sliced onions and stir to coat.
- Reduce heat to medium-low and cook the onions for 20-25 minutes, stirring occasionally, until they are soft and caramelized.
- Sprinkle the dried thyme over the onions and stir to combine.
- Pour in the beef broth, scraping the bottom of the skillet to deglaze. Let it simmer for 5 minutes.
- Stir in the heavy cream and let it simmer for another 2-3 minutes until slightly thickened.
- Return the seared chicken breasts to the skillet, ensuring they are well-coated with the sauce.
- Sprinkle the shredded Gruyère cheese over the chicken and onions.
- Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly and golden brown.
- Remove from the oven and let it rest for 5 minutes.
- Garnish with freshly chopped parsley before serving.
