Description

  • 2 pounds of potatoes (Yukon Gold or Russet)
  • 4 tablespoons of unsalted butter
  • 1 cup of whole milk (or cream)
  • 1 cup of chopped green cabbage (or kale)
  • 1 cup of chopped scallions (green onions)
  • Salt, to taste
  • Pepper, to taste
  • Optional: 1/2 cup of cooked bacon or ham, chopped

Instructions

  1. Peel the potatoes using a vegetable peeler. Cut them into evenly sized chunks (1-2 inches). Place in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender. Drain and let sit in a colander for a minute to evaporate excess moisture.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add chopped cabbage (or kale) and sauté for 5-7 minutes until tender and slightly caramelized. Add chopped scallions and cook for an additional 2-3 minutes until tender. Remove from heat.
  3. In the same pot as the drained potatoes, add the remaining 2 tablespoons of butter and the whole milk (or cream). Mash the potatoes to your desired consistency, seasoning with salt and pepper to taste.
  4. Gently fold the sautéed cabbage and scallions into the mashed potatoes. If using, mix in the cooked bacon or ham.
  5. Transfer to a serving dish, creating a small well in the center. Drizzle melted butter into the well for added flavor. Serve hot as a side dish or on its own.

Notes

  • For a vegan version, substitute butter with olive oil and use plant-based milk.
  • Feel free to add variations like grated cheese, sautéed garlic, or a hint of nutmeg for a unique twist.
