- 2 cups packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder

- 1 cup butterscotch chips
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Melt butter in a saucepan over low heat or in the microwave in 30-second intervals, stirring until melted.
- In a large bowl, combine melted butter and packed light brown sugar. Mix until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in butterscotch chips and nuts (if using).
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or line with parchment paper.
- Pour batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Let cool completely in the pan before cutting.
- Cut into squares and serve. Enjoy!
