  • 8 ounces of Brie cheese

  • 1/4 teaspoon nutmeg
  • 1/4 cup maple syrup
  • 1/2 cup pecans, roughly chopped
  • Fresh thyme leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut off both ends of the butternut squash to create a stable base. Slice the squash in half lengthwise and scoop out the seeds and stringy bits.
  3. Cut each half into 1-inch thick slices and place them in a large mixing bowl.
  4. Drizzle the squash with olive oil and sprinkle with salt, black pepper, ground cinnamon, and nutmeg. Toss to coat evenly.
  5. Line a baking sheet with parchment paper and spread the seasoned squash slices in a single layer.
  6. Roast the squash for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.
  7. While the squash is roasting, prepare the Brie by cutting it into small chunks or slices.
  8. In a small saucepan over low heat, combine the maple syrup and chopped pecans. Stir for 2-3 minutes until the pecans are toasted and fragrant.
  9. Once the squash is done, let it cool for a few minutes. Layer the roasted squash slices in a large serving dish.
  10. Sprinkle the Brie cheese evenly over the squash.
  11. Drizzle the toasted pecans and maple syrup mixture over the Brie and squash.
  12. Return the dish to the oven and bake at 400°F (200°C) for an additional 10-15 minutes until the Brie is melted.
  13. Let the dish sit for a couple of minutes before serving.
  14. Garnish with fresh thyme leaves if desired and serve warm.
