- 1 medium butternut squash (about 2 pounds)
- 8 ounces of Brie cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cinnamon

- 1/4 cup maple syrup
- 1/2 cup pecans, roughly chopped
- Fresh thyme leaves for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut off both ends of the butternut squash to create a stable base. Slice the squash in half lengthwise and scoop out the seeds and stringy bits.
- Cut each half into 1-inch thick slices and place them in a large mixing bowl.
- Drizzle the squash with olive oil and sprinkle with salt, black pepper, ground cinnamon, and nutmeg. Toss to coat evenly.
- Line a baking sheet with parchment paper and spread the seasoned squash slices in a single layer.
- Roast the squash for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.
- While the squash is roasting, prepare the Brie by cutting it into small chunks or slices.
- In a small saucepan over low heat, combine the maple syrup and chopped pecans. Stir for 2-3 minutes until the pecans are toasted and fragrant.
- Once the squash is done, let it cool for a few minutes. Layer the roasted squash slices in a large serving dish.
- Sprinkle the Brie cheese evenly over the squash.
- Drizzle the toasted pecans and maple syrup mixture over the Brie and squash.
- Return the dish to the oven and bake at 400°F (200°C) for an additional 10-15 minutes until the Brie is melted.
- Let the dish sit for a couple of minutes before serving.
- Garnish with fresh thyme leaves if desired and serve warm.
