  • 4 large eggs
  • 4 slices of cooked bacon or sausage patties (optional)
  • 2 tablespoons of butter
  • Salt and pepper to taste
  • Fresh herbs (like chives or parsley) for garnish (optional)
  • Hot sauce or ketchup for serving (optional)

Instructions

  1. Gather all your ingredients on a clean countertop or kitchen table.
  2. If using bacon, cook it in a skillet over medium heat until crispy. Remove from the skillet and place on a paper towel to drain excess grease. If using sausage patties, cook them according to package instructions.
  3. Crack the eggs into a bowl and whisk them together until the yolks and whites are fully combined. Season with a pinch of salt and pepper.
  4. Prepare your bread by laying out the slices on a clean surface. If you prefer, you can lightly toast the bread in a toaster for added crunch.
  5. In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Make sure the butter coats the bottom of the skillet evenly.
  6. Once the butter is melted and bubbling, pour in the whisked eggs. Allow the eggs to cook undisturbed for about 1-2 minutes until they start to set around the edges.
  7. Using a spatula, gently stir the eggs, pushing them from the edges toward the center. Continue to cook for another 2-3 minutes until the eggs are fully cooked but still soft and fluffy. Remove from heat and set aside.
  8. Take two slices of bread and place them on a clean surface. On each slice, place a slice of cheese.
  9. Next, add a portion of the scrambled eggs on top of the cheese on each slice. If you are using bacon or sausage, add a slice or patty on top of the eggs.
  10. Top the eggs and meat with another slice of cheese, then place the remaining slices of bread on top to complete the sandwich.
  11. In the same skillet used for the eggs, add the remaining tablespoon of butter and heat over medium-low heat.
  12. Once the butter is melted and bubbling, carefully place the assembled sandwiches in the skillet. If your skillet is not large enough, you may need to cook them in batches.
  13. Cook the sandwiches for about 3-4 minutes on one side, or until the bread is golden brown and crispy. Press down gently with a spatula to ensure even cooking.
  14. Carefully flip the sandwiches over and cook for an additional 3-4 minutes on the other side, until the bread is golden brown and the cheese is melted.
  15. If you find that the bread is browning too quickly before the cheese melts, you can lower the heat and cover the skillet with a lid to help the cheese melt.
  16. Once the sandwiches are cooked to perfection, remove them from the skillet and place them on a cutting board.
  17. Allow the sandwiches to cool for a minute before slicing them in half diagonally. This will help prevent the cheese from oozing out too much.
  18. Garnish with fresh herbs if desired, and serve with hot sauce or ketchup on the side for dipping.
