- 6 bratwurst sausages
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 1 can (12 oz) of your favorite beer (lager or ale works best)
- 1 cup beef broth
- 2 tablespoons Dijon mustard
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- 6 hoagie rolls or brat buns
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the bratwurst sausages and sear for about 4-5 minutes on each side until browned.
- Remove the brats from the skillet and set aside.
- In the same skillet, add the sliced onions. Add more olive oil if needed.
- Cook the onions over medium heat, stirring occasionally, for about 10-15 minutes until caramelized.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Pour the beer into the skillet, scraping up any browned bits.
- Add the beef broth, Dijon mustard, brown sugar, smoked paprika, and a pinch of salt and pepper. Stir until combined.
- Return the seared bratwurst to the skillet, nestling them into the onion and beer mixture.
- Reduce heat to low, cover, and let braise for 20-30 minutes until cooked through (internal temperature of 160°F/70°C).
- Toast the hoagie rolls or brat buns if desired.
- Place a brat in each bun and spoon the caramelized onions and beer sauce over the top.
- Garnish with freshly chopped parsley and any additional condiments you prefer.
