  • 6 bratwurst sausages
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 can (12 oz) of your favorite beer (lager or ale works best)
  • 1 cup beef broth
  • 2 tablespoons Dijon mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 6 hoagie rolls or brat buns

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the bratwurst sausages and sear for about 4-5 minutes on each side until browned.
  3. Remove the brats from the skillet and set aside.
  4. In the same skillet, add the sliced onions. Add more olive oil if needed.
  5. Cook the onions over medium heat, stirring occasionally, for about 10-15 minutes until caramelized.
  6. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  7. Pour the beer into the skillet, scraping up any browned bits.
  8. Add the beef broth, Dijon mustard, brown sugar, smoked paprika, and a pinch of salt and pepper. Stir until combined.
  9. Return the seared bratwurst to the skillet, nestling them into the onion and beer mixture.
  10. Reduce heat to low, cover, and let braise for 20-30 minutes until cooked through (internal temperature of 160°F/70°C).
  11. Toast the hoagie rolls or brat buns if desired.
  12. Place a brat in each bun and spoon the caramelized onions and beer sauce over the top.
  13. Garnish with freshly chopped parsley and any additional condiments you prefer.
