- 3 cups old-fashioned rolled oats

Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar on medium speed until light and fluffy (about 2-3 minutes).
- Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until smooth.
- In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Fold in the rolled oats and any optional add-ins like raisins, chocolate chips, or nuts.
- Cover the bowl with plastic wrap or a kitchen towel and chill in the refrigerator for at least 30 minutes.
- Line a baking sheet with parchment paper.
- Using a cookie scoop or tablespoon, portion out the dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
- Slightly flatten each cookie with the back of a spoon or your fingers.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers look set but still soft.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
- Store completely cooled cookies in an airtight container at room temperature for up to a week.
- For longer storage, freeze cookies in a single layer until solid, then transfer to a freezer-safe bag or container for up to 3 months. Thaw at room temperature or microwave for a few seconds before enjoying.
