Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar on medium speed until light and fluffy (about 2-3 minutes).
  3. Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until smooth.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Fold in the rolled oats and any optional add-ins like raisins, chocolate chips, or nuts.
  7. Cover the bowl with plastic wrap or a kitchen towel and chill in the refrigerator for at least 30 minutes.
  8. Line a baking sheet with parchment paper.
  9. Using a cookie scoop or tablespoon, portion out the dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
  10. Slightly flatten each cookie with the back of a spoon or your fingers.
