  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1/4 cup walnuts or pecans, chopped (optional)
  • Fresh parsley, chopped (for garnish)
  • Leafy greens (for serving, optional)

Instructions

  1. Start by gathering all your ingredients on a clean countertop or workspace.
  2. Open the cans of tuna and drain the water thoroughly. Use a fork to flake the tuna into smaller pieces in a mixing bowl.
  3. Wash the apple under cold water. Core and dice the apple into small cubes, leaving the skin on for added texture and nutrients. Place the diced apple in a separate bowl to prevent browning.
  4. Wash and finely chop the celery into small, uniform pieces.
  5. Peel and finely chop the red onion. Soak in cold water for about 10 minutes if you prefer a milder flavor.
  6. If using nuts, chop the walnuts or pecans into small pieces.
  7. In a medium-sized mixing bowl, combine the plain Greek yogurt (or mayonnaise) with the Dijon mustard and lemon juice. Stir until smooth and creamy.
  8. Add salt and black pepper to the dressing. Taste and adjust seasoning as needed.
  9. In a large mixing bowl, combine the flaked tuna, diced apple, chopped celery, and red onion. Add nuts if using.
